El Riso Maridà

 

It is a recipe handed down from generation to generation in some families of Lugagnano.Cook a traditional risotto: toast the rice in butter / oil and gradually add beef stock.Halfway through cooking, add a spoon of white flour.Prepare separately a meat sauce with a bit of tomato sauce. The sauce can be cooked in the traditional way with pork and beef, onion and rosemary.The original recipe calls for the use of chicken or hen and its giblets (liver, heart, intestines, etc.).Lay on a buttered pan some very thin alternating layers of rice, ham and cheese.Complete with Parmesan cheese and a bit of butter.Place in an oven for a few minutes to get a good amalgam and serve very hot.
