Rigatel del Castel

According to a story, in 1280, during a palio at the castle, a young ‘casaro’ (cheese maker) offered a wheel of cheese: it was so good that it conquered the audience and the Signora Scaligera. Questioned upon the recipe, the young ‘casaro’ kept the secret and he called the cheese "Rigatel del Castel."

It is a cheese that looks poor, with a chunky striped shape characterized by circles, but it tastes great and it is perfect in every occasion.
